I am always looking for quick and nourishing snacks that Ella will LOVE to eat and make with me!!! I went to bulk barn the other day and picked up tons of seeds and nuts and decided in the afternoon to put them all together as energy balls. They turned out fantastic!!!! I fell in love with them and so did Ella. That is why I had to make a LIVE video about them (join me on FB to watch my Live Video @wholeandhealthykitchen) with Ella by my side. I hope these are as delicious for you as they were for us!

Ingredients

1/2 nut butter (peanut butter or almond butter or cashew butter)**

1 cup gluten free oats

1/3 cup maple syrup (or honey)

2 tbsp hemp hearts

2 tbsp Chia seeds
1/4 cup flaxmeal

1/3 cup shredded coconut
1/2 cup chocolate chips mini’s
1 tsp vanilla

 

Optional:
1 tbsp cocoa powder
2 tsp Maca Powder
1-2 tbsp water (if too dry)

 

NOTE: use the seeds and nuts you have on hand. You do NOT have to have all of these seeds, you can leave some out or use different ones.You can also use all flaxmeal and take our hemp hearts and chia.

Instructions

  1. Add all ingredients to a medium sized bowl. The nut butter, oats,  hemp hearts, chia seeds, chocolate chips, maple syrup, vanilla and the maca root powder or cocoa powder if using. Mix all together with hands.

  2. Roll into 1/2 tbsp sized balls and add to a tray or plate with parchment paper. Spaced out so not touching.

  3. Roll each ball in shredded coconut (optional- if not rolling in coconut, add to mixture)

  4. Sprinkle some love and joy

  5. Pop in freezer for 10 to 30 minutes. Enjoy!

Saving Money:

Buy your seed in bulk!! I love bulk barn for this reason. I get to buy as much or as little as I want or need.

Use peanut butter instead of almond or cashew.

Saving Time:

Double or triple the batch and keep them in the freezer. They are excellent snacks, especially for when kids come home from school and you need something nourishing really quick.
