I have been receiving Fresh Fruit Boxes every week from Fresh Box Market in exchange for REELS for them on Instagram!  Check out REELS here.  Becuase of this I had soo omany blueberries I wanted to use up and these Blueberry Muffins were the most perfect thing!!! The streudal crumble on top is heavenly!! And even though it does add extra calories, its so worth it!! Enjoy these perfect muffins!

FOR MUFFINS:

  1. Combine 1 1/2 cups flour, 1/2 cup sugar, salt and baking powder. Place light olive oil into a 1 cup measuring cup; add the egg and add enough almond milk to reach the 1-cup mark. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.

FOR STRUDEL TOPPING:

  1. Mix together sugar, flour, and  cinnamon. Cut in the butter/coconut oil or use fingers to pinch the butter/oil into the crumb mixture.  Mix with fingers until well combined, and sprinkle over muffins before baking.
  2. Bake 400F for 20 minutes or until toothpick pulls out clean. Let rest in muffin tin for 10 minutes before trying to take them out.  Serve and eat with Love!

Saving Money:

Use a delivery service such as FreshBox Market or shop at your local farmers market. You could also use frozen blueberries

Tips:

You will want to double this recipe!

Frozen Blueberries are OK. Just use a bit less milk.Fresh is best.

Use Flax Egg:
1 tbsp flax meal + 2 tbsp water. Rest for 5 minutes. Stir with a fork and use as you would an egg.

I get my all-purpose flour from my local bakery so it is all stone ground and fresh with nothing else added or taken away.

If all you have is:
Frozen Blueberries, they will not turn out the same, but still good.
Strawberries, use those! They will be perfect still.
Apples, use those! Peel them and dice the size of a blueberry. Cover in a drizzle of lemon and cinnamon before using in the recipe.
